What breathability actually means
Heat and moisture leave a mattress when air moves through it. That is the entire mechanism, and it requires open space inside the mattress for the air to move through.
So breathability is a structural property, and it can be ranked:

The check that costs nothing: ask whether there is a spring layer and how deep it is. If the answer is a number in centimetres, breathable means something. If the answer is a description of the cover, it does not.
And the part that is not airflow at all
Some of what people call breathability is moisture handling rather than air movement, and it is worth separating because the materials differ.
Wool, cotton and lyocell absorb moisture vapour into the fibre and release it as conditions change. Polyester holds it at the surface. Since the sensation people describe as sleeping hot is usually clamminess rather than temperature, a fabric that moves moisture feels cooler because it feels drier.
That is real, and it happens in the cover and the quilting rather than in the structure. Both matter and they are different claims, and marketing collapses them into one word.
Two cheaper causes to rule out first
Before buying a mattress to solve heat, rule out the two things that are more often responsible and cost a fraction as much.
Your duvet. A 13.5 tog duvet suited poorly insulated houses. Many modern homes never drop far enough at night to need one. Seven to 10.5 tog is the useful range.
Your pillowcase and protector. A polyester pillowcase holds moisture against your face. A cheap plastic-backed mattress protector seals off the airflow through whatever spring layer you have, which is the most common reason someone buys a hybrid for temperature and cannot work out why it sleeps warm.
Both are fixable for under a hundred pounds and both are more likely than the mattress.
